The fluctuating Texas weather has been hard on me, but what keeps me going is filling our pantry and fridge with healthy options that fuel my mind and body especially during those need-to-eat, quick grab moments. As a power breakfast or late afternoon snack that doubles as a nutrient dense pick me, what I love most about this simple dish is that it is low in sugar and high in slow burning energy making it your best bet to satiate you through the next few hours without crashing. Made with energy rich coconut cream topped with fresh organic berries, chia seed, raw honey and lemon zest, you can get your healthy fats, antioxidants, B6, omega 3s and allergy fighting foods in one delicious bite. 


  • 1/2 cup full fat organic coconut cream (be sure to pick a preservative free option. We love Nature's Forest)
  • 1/4 cup blackberries
  • 1/4 cup blueberries 
  • 1/2 sliced banana
  • 1/2 tsp chia seeds
  • raw honey to drizzle
  • 1/2 lemon zest


Scoop the cream part of the coconut milk out of the can and whip with a fork till light and fluffy. Top with berries, chia seeds, drizzle with honey and finish with a zest of lemon for pop of bright flavor.
