The calendar is quickly flipping down to Halloween, which means it's just a matter of time until the busy holiday season is upon us. While it can seem easier to eat out on nights that are crammed with after-work happy hours, school events and sports functions, it only takes a little bit of planning ahead to have delicious, nutritious dinners on the table for you and your family. (Even better: Healthy leftovers to eat the following day for lunch.)

We're fans of this list of simple sheet-pan suppers from Southern Living. Not only does one pan mean less prep and less clean up (win-win!), but two of our favorite recipes, Greek Pork Chops with Squash and Potatoes and Bratwurst with Peppers and Onions, take an hour or less from start to finish. Can't beat that.

Southern Living Bratwurst

Bratwurst with Peppers and Onions


Makes 6 servings

2 large red bell peppers, cut into strips

1 large yellow bell pepper, cut into strips

2 large sweet onions, cut into strips

1 tablespoon olive oil

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

Vegetable cooking spray

6 fresh bratwurst sausages (about 1 1/2 lb.)

6 hoagie rolls, lightly toasted and split

Southern Living Greek Pork Chops with Squash

Greek Pork Chops with Squash and Potatoes


Makes 4 Servings

4 (1-inch-thick) frenched pork loin chops

1/2 cup fresh lemon juice

4 tablespoons olive oil

3 garlic cloves, minced

3 tablespoons chopped fresh oregano

1 teaspoon black pepper

3 teaspoons kosher salt, divided

2 medium yellow squash, sliced 1/2 inch thick

1 large zucchini, sliced 1/2 inch thick

1/2 pound small red potatoes, quartered
